Baking contest to include ‘diabetic friendly’ cookies

“Oatmeal raisin cookies are my favorite and I am experimenting using apples in place of raisins,” Menninger said.

To make healthy substitutions, Menninger uses Splenda brown sugar blend instead of sugar, whole-wheat flour instead of white, margarine instead of butter and egg substitute instead of eggs.
